SKU: N/AFor eggplants in oil fillets we select the most consistent fruits of the “long Violetta” variety, the most suitable one thanks to its characteristic elongated shape. The products are cut into strips and processed using ancient techniques which, using cooking salt, eliminate excess liquids. Finally they are seasoned with wine vinegar, oregano, garlic, salt and red pepper and placed in glass jars with oil.
