The hardest and most consistent tomatoes are picked and selected, cut by hand and, after a few hours, laid out in the sun for a slow and natural drying. Subsequently, once the drying is completed, expert hands select only the best pieces and then move on to the cleaning phase. Once cleaned and “stretched” the tomatoes, dressed with wine vinegar, oregano, garlic, salt and chilli pepper are placed by hand in glass jars together with the government oil.
